These Blueberry Coconut Bars are a delicious alternative to an almond joy bar, just 5 ingredients and vegan!


Aside from Reese’s Pieces, Almond Joys are pretty much my favorite treat ever so when I decided I wanted a sweet fix but can’t run out to the store, I rummaged the fridge and pantry and here we are with this goodness.

So let’s get right down to what makes these so good:
1. No baking required
2. Coconut + Chocolate, yes please!
3. No added sugar
4. Quick and easy
5. Only 5 ingredients!

You can make these with any berries really. I think next time, I’ll try raspberries – when I can hit the store and grab some more chocolate.

A few things to help you make these delicious treats:

Blueberry Coconut Bars
Ingredients
- 1 cup blueberries (or any berry you choose)
- 1/4 cup coconut oil
- 1 cup coconut flakes
- 1 pinch salt
- 1 cup dark chocolate, chopped
Instructions
- Puree the berries in your blender
- Add coconut flakes, coconut oil and salt to blender and mix until combined
- Place silicone muffin liners in your mini muffin tin
- Divide and press mixture firmly into mini muffin tins
- Freeze for 30 minutes or until set
- Melt your chocolate
- Pop frozen bars out of the silicone liners and coat them with melted chocolate
- Freeze for 5 minutes or until set
- Enjoy! Store in an airtight container in the fridge for upto 5 days
