Place cookies in a food processer and finely crush
Reserve 1/4 cup cookie crumbs, set aside
Mix remaining cookie crumbs with cream cheese until well blended
Shape into 1-inch balls and place on a parchment lined baking sheet
Freeze balls for 10-12 minutes
Place 8 oz chocolate chips in a microwave safe dish and heat for 30 seconds at a time until melted
Add balls one at a time until covered and remove with a fork, letting the excess drip off
Place chocolate covered balls on a parchment lined baking sheet and repeat until all balls are done
Sprinkle with reserved cookie crumbs
Refrigerate for 1 hour or until firm. Keep refrigerated
