Potato and Broccoli Soup

Ingredients
  

  • 1/2 onion diced
  • 3 cloves garlic minced
  • 1 tbsp butter
  • 8 oz frozen hash browns southern style hash browns with onions and peppers
  • 8 oz frozen broccoli florets
  • 32 oz vegetable broth
  • 16 oz heavy cream
  • 1/8 cup smoked paprika
  • 1/2 cup shredded cheddar cheese
  • 1 tsp freshly ground black pepper

Instructions
 

  • In a large pot, melt butter and brown onion and garlic until fragrant
  • Add broth, cream and paprika and pepper and bring to a boil
  • Add broccoli and hash browns and lower heat to a simmer
  • Cook on low for about 25 minutes or until veggies are tender
  • Serve with shredded cheddar cheese
  • Optional: top with chives and red pepper flakes
